Grilled portabella burgers

One of my recent goals is to find more quick and healthy dinner recipes. Under 20 minutes? Great. Under 20 minutes and healthy? Even better. These grilled portabella mushroom burgers fit those requirements perfectly, so I can have a delicious vegetarian dinner on the table in 10 minutes.

If I’m in a hurry, I like to heat up some refried black beans to go along with the burgers. But if you have a little more time, you could make some home-fried potatoes instead — just wait to grill the portabella mushrooms until you’re frying the potatoes.

Grilled portabella burgers
(Makes 2 burgers)

For the burgers:

  • 2 large portabella mushroom caps, cleaned and with stems removed
  • Seasoned salt
  • 2 large slices of cheese (we like smoked gouda or mozzarella)

Place the portabella mushrooms gill side up (cap side down) in a George Foreman grill and season with seasoned salt. Cook for 8 minutes, then open the grill and top each mushroom with a slice of cheese. Leave the lid open and cook an additional 2 minutes, or until the cheese is melted.

For serving (choose whatever toppings you like):

  • 2 toasted sandwich buns
  • Mayonaise
  • Sliced avocado
  • Lettuce leaves
  • Tomato slices
  • Thinly sliced red onion
  • Ketchup
  • Mustard
  • Pickle slices

Place a grilled mushroom on each bun, then add the toppings of your choice. Enjoy immediately!
