Raisin oatmeal bars with cinnamon icing

I made these bars on Friday evening for a get-together with some friends from church. While I’ve had them many times before (the recipe is from my aunt), it’s the first time that I’ve made the recipe. The raisin filling is sweet and jam-like, and I love the combination of the oatmeal crust with the cinnamon icing.

For the raisin filling:

  • 1/4 cup sugar
  • 1 Tbsp corn starch
  • 1 cup water
  • 2 cups raisins

For the oatmeal crust:

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups quick oats
  • 2 Tbsp water, divided

Preheat oven to 350 degrees. In a small saucepan, mix 1/4 cup sugar and 1 Tbsp cornstarch together. Stir in 1 cup water and 2 cups raisins. Cook over medium heat until the mixture is thickened and clear. Set aside to cool.

Meanwhile, make the crust. Cream the butter and brown sugar together in an electric mixer. Stir in flour, baking soda, salt, and quick oats. Add 1 Tbsp of water and mix until crumbly.

Press half of the crust mixture into a greased 9″x13″ pan. Spread the cooled raisin filling over top of the crust. Add another 1 Tbsp of water to the remaining crust crumbs and mix well. Spoon onto filling and pat smooth. Bake at 350 degrees for 35 minutes.

For the cinnamon icing:

  • 1 cup powdered sugar
  • 1/4 tsp cinnamon
  • About 1 Tbsp milk

Make the icing right after you take the bars out of the oven. Mix the powdered sugar and cinnamon together; then, add just enough milk so that you can drizzle the icing. Drizzle icing over the warm bars and let them cool before cutting into squares.
