I first shared this kofta recipe a couple summers ago, and since then, it’s become one of our favorites. These koftas are quick, delicious, and versatile — you can make them out of ground beef, lamb, or turkey.

I often serve them sandwich-style in pita pockets with cucumbers, tomatoes, and feta cheese, but you can also serve them over rice. I’ve also used this recipe to make burgers a couple times — it’s a delicious option if you’re looking for something a little different from a traditional hamburger!

(Makes 4 kabobs/burgers or 8 koftas)

For the koftas:

  • 1 lb of ground beef, lamb, or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground tumeric
  • Pinch of ground cinnamon
  • 1 tsp Sriracha hot sauce
  • 2 Tbsp fresh cilantro, chopped
  • Salt and freshly ground black pepper

Combine all ingredients in the bowl of a stand mixer or food processor and mix until thoroughly combined.

Divide the meat mixture into four (kabobs/burgers) or eight (koftas) equal portions. If you’re making kabobs, shape them around skewers; otherwise, form into patties. Grill the koftas until they are cooked through, and serve with desired toppings (see below).

For serving:

  • Pita pockets, buns, or rice
  • Thinly sliced tomatoes
  • Thinly sliced cucumbers
  • Thinly sliced red onion
  • Fresh cilantro
  • Feta cheese
  • Greek yogurt mixed with dill
  • Sriracha hot sauce

Serve koftas in pita pockets, buns, or over rice. Add toppings to taste. Enjoy!
